Ingredients
Avocado Sauce
  • 1 avocado ripe
  • 1/4 cup lemon juice
  • 1 cup basil leaves
  • 1/3 cup cilantro
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 cup nutritional yeast
  • 1/4 - 1/2 cup almond milk Use to thin
Pasta/Base
  • 10 oz macaroni or elbow pasta egg free
  • 4 cloves garlic minced
  • 3 1/2 TBS olive oil
  • 3 TBS flour
  • 1 1/2 cup almond milk
  • 1/2 tsp salt

Instructions
  1. Add all of the avocado sauce ingredients into a blender and mix until smooth. Set aside.
  2. Prepare the pasta according to the directions on the package. Rinse, drain and return the pasta to the pot.
  3. Prepare sauce base while the pasta is cooking. Saute' garlic in olive oil for about two minutes. Whisk in flour. Slowly add almond milk in small amounts, while whisking over medium high heat. Add salt. Sauce should thicken quickly. Once it is thick, remove from heat.
  4. Pour the avocado mixture into your sauce base and whisk. Pour over cooked pasta, stirring to combine. Serve immediately.
