To make an optional chocolate shell for the ice cream:
Melt coconut oil for about 15-20 seconds in the microwave. Then add the cocoa powder and pinch of coffee grounds. (This should be made BEFORE you make the ice cream).
In a food processor, blend frozen banana. When it is broken down some, add the coconut milk and vanilla extract. Process until smooth.
Scoop out ice cream and immediately top with chocolate mixture. It will harden as soon as it hits the ice cream. You can also add any other toppings you wish. Enjoy!
