Ingredients
  • 2 cups flour pastry, all purpose, spelt, etc.
  • 1 cup milk of your choice Rice, hemp, soy, almond, dairy, etc.
  • 1/2 cup water
  • 2 tbsp maple syrup Or agave nectar or honey
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions
  1. Combine milk, water, maple syrup and vanilla extract.
  2. In a separate bowl, combine flour, baking powder, cinnamon and salt.
  3. Pour the wet mixture into the dry mixture, stirring gently until almost combined.
  4. Let batter rest for at least 10 minutes. Meanwhile, begin heating a non-stick skillet over medium heat.
  5. When the skillet is hot (a drop of water sizzles in the skillet), turn the heat down slightly and get ready to pour your batter. Use a soup ladle or a measuring cup for consistent proportions.
  6. Flip the pancakes when bubbles appear in the middle and pop, or when the bottoms begin to turn golden. For fluffy pancakes, flip gently!
  7. Cook on the other side until bottom is golden and remove from the skillet. Serve with your favorite toppings and enjoy!
Recipe Notes

This recipe is very versatile and can be used as a base for other flavors, like chocolate, blueberry or pumpkin.

Experiment with your favorite gluten-free flour blends to make this gluten free.
