Ingredients
  • 1/2 tsp vanilla extract
  • 2 1/2 cups fresh blueberries
  • 1/2 cup real maple syrup
  • 1/8 tsp unrefined sea salt
  • 2 cans full-fat coconut milk
  • 1/2 tsp vanilla extract

Instructions
  1. In a medium pot, boil blueberries, maple syrup and salt. Turn down to low heat and simmer for 3-4 minutes. When berries start popping open, remove from heat and let cool.
  2. Put blueberry mixture, coconut milk and vanilla extract in a blender and process until smooth and creamy. Refrigerate until cold. Overnight refrigeration is recommended.
  3. Pour into an ice cream maker and process according to the ice cream maker's instructions.
  4. You can serve immediately as soft serve, or freeze in a freezer safe container until it is firm.
