Ingredients
  • 1 head Cauliflower
  • olive oil
  • 1/2 tsp garam masala (omit if your child has a less adventurous palate, or simply reduce amount)
  • 3 sweet potatoes peeled and cut into one-inch pieces
  • 2 cloves garlic
  • 7 cups water
  • 1 onion diced

Instructions
  1. Preheat oven to 400 degrees.
  2. Cut cauliflower into florets and sprinkle lightly with garam masala.
  3. Arrange cauliflower on baking sheet and drizzle with oil, then roast 20 to 30 minutes or just tender, then remove and allow to cool.
  4. In a large pot, add water, onion and garlic, and bring to a boil. Reduce heat and simmer until sweet potatoes are tender. Add cauliflower and remove from heat.
  5. Blend 1/2 of soup in a blender or using an immersion blender until smooth, then combine with other half, reheat and season if needed with salt and pepper.
