1cupSunbutterOr any kind of nut or seed butter
1/3cupOat flourOr coconut flour for gluten-free
2TBSPbutterAgain, to make dairy free, use a dairy free brand such as Smart Balance
Combine all of the ingredients minus the chocolate. Mix them in a food processor.
Refrigerate mixture until firm (about 15-20 minutes).
Scoop the mixture out using two greased spoons. Press the mixture into an egg shape. Place them on a wax lined baking sheet. Freeze for approximately 15 minutes.
Melt the chocolate while the eggs are freezing. Set the microwave to half power (50%). Microwave in 30 second intervals, stirring in between each. Stop microwaving when all chocolate except for a few chunks are melted.
Dip and coat the eggs in the chocolate using a fork. Place on wax paper to cool. Once you have coated all the eggs, put them in the refrigerator to harden. Let cool for at least fifteen minutes.
