Ingredients
  • 4 ears corn shucked
  • 2 large red potatoes, chopped
  • 3 tbsp coconut or olive oil
  • 1 large white onion
  • 5 minced garlic cloves
  • 3 large chopped carrots
  • 3 chopped celery stalks
  • 1 red bell pepper chopped
  • 1 1/2 tsp sea salt
  • 2 tsp cajun seasoning
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 2/3 can full-fat coconut milk (canned)
  • 2 cups water
  • 1 bunch green onions

Instructions
  1. Bring a pot of water to a boil, cook corn 5-8 minutes, remove from water and set aside. DO NOT DISCARD WATER.
  2. Cook one red potato in the water until tender (10 min or so).
  3. While potato is cooking, saute other vegetables: Heat oil in a large pot, then add remaining potato, chopped onion, garlic, carrots, pepper, celery, salt, Cajun seasoning, paprika and cumin. Saute at medium heat until vegetables are tender (around 10 minutes).
  4. Cut corn from corncobs. Put two cobs' worth in a blender with boiled potato. Add coconut milk and water. Blend until smooth.
  5. Add remaining corn to the pot with sauteed vegetables, add contents of blender, bring to a gentle boil and cook until potato is soft enough to eat.
  6. Remove from heat, add extra cajun seasoning, salt or pepper as desired, top with chopped green onion
