Ingredients
  • 2 Tbsp lemon juice
  • 2 Tbsp chopped dill
  • sea salt and freshly ground pepper
  • 1/2 Cup tofutti better than sour cream (or other vegan sour cream)
  • 4 cucumbers

Instructions
  1. Peel Cucumbers. Slice lengthwise, scoop out seeds, then roughly chop. Set aside in a bowl.
  2. Combine lemon juice, sour cream, dill and salt and pepper in a small bowl. Whisk to combine.
  3. Pour over cucumbers, stir to coat, refrigerate at least one and up to four hours and serve.
