Ingredients
  • large zucchini grated
  • 1/2 tsp salt
  • 2 cloves garlic minced
  • 1 tsp baking powder
  • 1/2 Cup flour
  • 1/4 cup onion diced
  • 1/4 tsp black pepper
  • 1 Tbsp olive oil

Instructions
  1. sprinkle salt over grated zucchini in a bowl, allow to sit for an hour or so to remove excess water. Squeeze liquid out in a dish towel and replace in bowl.
  2. Mix in flour and spices, including garlic.
  3. shape into golf-ball sized balls, squish slightly to flatten.
  4. Heat olive oil in a pan on medium heat, fry each fritter around 5 minutes on each side or until lightly browned.
  5. Serve with vegan sour cream or vegan chipotle mayo if you like things spicy!
