Ingredients
  • 3 Cups Unsweetened shredded coconut
  • 3/4 Cup granulated sugar
  • 1/3 Cup all-purpose flour Use a gluten free blend if necessary
  • 2 Tbsp corn starch
  • 1 pinch salt
  • 1/2 Cup unsweetened canned coconut milk (NOT the beverage)
  • 1/3 Cup Earth Balance Coconut Spread
  • 2 tsp powdered egg replacer (mixed with 1 Tbsp water per instructions)
  • 1 tsp vanilla extract

Instructions
  1. Preheat oven to 325. Line two bakng sheets with parchment paper.
  2. Stir together coconut, sugar, cornstarch and salt.
  3. Heat coconut milk and Earth Balance spread together in a saucepan until melted. Remove from heat and add egg replacer and vanilla extract.
  4. Stir liquid mixture into dry mixture and mix. Drop batter by tablespoons onto baking sheet.
  5. Place in freezer for 20-30 minutes, then bake 25-30 minutes or until golden brown. Let cool at least 20 minutes before removing from pan.
Recipe Notes

Replace flour with coconut flour for gluten-free cookies!
