Ingredients
  • 1 1.5 oz package enchilada sauce
  • 1 8oz can tomato sauce
  • 1 15oz can vegan refried beans
  • 1 pound fresh spinach
  • 1 16 oz can corn
  • 1 4 oz can chopped green chilies
  • 1 cup shredded cheese choose from dairy cheese, nut cheese or soy cheese

Instructions
  1. Preheat oven to 375 degrees. Prepare sauce according to directions. Begin heating beans in another pan on medium-low heat.
  2. As beans heat up, add around 1/4 cup of sauce to beans and mix well.
  3. In a separate pan, steam spinach until just wilted, then set aside.
  4. Add corn and chilies to bean mixture.
  5. Lay one tortilla on a plate, spoon around 3 Tbsp of sauce on tortilla, layer bean mix, a spoonful of spinach, and a small amount of cheese in the center of tortilla, roll up and place in a baking dish.
  6. Fill and arrange remaining enchiladas in baking dish. Cover with remaining sauce and cheese. Bake covered with foil for 20 min, then an additional 10 min uncovered.
