Ingredients
  • 3 Cups UNCOOKED gluten-free macaroni
  • 1 pkg gardein gluten-free beefless ground (check for any potential allergens)
  • 1 tsp sunflower oil
  • 1/2 medium onion chopped
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 Cup reserved pasta water
  • 1 package vegan shredded cheese (check for any potential allergens)
  • 1 tomato chopped
  • black pepper to taste
  • 1 green onion chopped

Instructions
  1. Start cooking noodles, heat a large cast iron skillet over medium heat, saute onion in sunflower oil until soft.
  2. Add chili powder, cumin and paprika, and saute one minute. Add beefless ground, stir until cooked throughout. If mixture begins to dry out, add some pasta water.
  3. When pasta has cooked to al dente, drain and add to skillet, then toss with shredded cheese and ground pepper.
  4. Top with green onion and diced tomato, and serve immediately.
