Ingredients
  • 2 cups gluten free flour mix Bob's Red Mill 1 to 1 mix is a really good GF mix
  • 2 tsp xatham gum If you use Bob's 1 to 1, no need to use xatham gum
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup butter or margarine Room temperature. Also, Earth Balance or Smart Balance are good dairy free choices.
  • 3/4 cup milk of your choice
  • 1 tsp lemon juice
  • 2 TBS raw honey
  • 1 cup raisins

Instructions
  1. Before starting, heat your oven to 375 degrees.
  2. In a large bowl, mix all ingredients on medium speed until they are well mixed. Please be sure that you do not over mix!
  3. On a baking stone, mold the dough into a circular shape.
  4. Bake for about 30-45 minutes. Bread is done when it passes the clean knife/fork test. Let it sit for about 30 minutes before eating.
