Ingredients
  • 10 Cups water
  • 3/4 Cup pearl barley rinsed and drained
  • 3 Cups Better Than Bouillion no-chicken broth
  • 1 large onion chopped
  • 2 cloves garlic thinly sliced
  • 1/2 tsp red pepper flakes
  • 3/4 tsp coarse salt
  • freshly ground pepper to taste
  • 1 can cannellini beans do not drain liquid
  • 1 bunch kale roughly chopped
  • 1 Tbsp + 1 tsp grated vegan parmesan I like Follow Your Heart brand
  • 1/2 tsp grated lemon zest

Instructions
  1. Boil 8 cups water in a large pot. Reduce heat, add barley and simmer until tender (around 1 hour).
  2. Add 2 cups broth to the same pot, bring to a boil. Reduce heat, add onion, garlic, pepper flakes and salt. Season with pepper to taste, simmer until barley is soft, about 20 min.
  3. Add beans with liquid, kale, remaining 2 cups water and 1 cup broth. Simmer until kale is tender (around 7 minutes).
  4. Serve topped with parmesan and lemon zest.
