Ingredients
  • zest of one large lemon
  • juice of two large lemons
  • 1 can full-fat coconut milk
  • 1 pinch salt
  • 3 Tbsp sweetener of your choice
  • 1/4 tsp turmeric
  • 3 Tbsp chia seeds (1 or two Tbsp more if you like a really thick, crunchy pudding).

Instructions
  1. Blend lemon zest, juice, coconut milk, sweetener, salt and turmeric. Add chia seeds and give a couple quick pulses to make sure they are well-distributed.
  2. Pour the mixture into serving dishes/glasses. Chill overnight.
  3. Garnish with whipped coconut cream or other dairy-free topping and extra lemon zest if desired.
