This "slimmer," healthier alternative to gooey chocolate brownies, while lighter and chewier, really do taste good. Personally, I find these brownies are better when allowed to cool and, as I like to say, sit for a while and think about their desserty-ness, rather than eating them hot from the oven.

Ingredients
  • 2 cups flour
  • 1/2 cup cocoa
  • 1+1/2 tsp baking soda
  • 1+1/2 cups sugar (We once used 1 cup of sugar and it still came out fine.)
  • 1 tsp salt
  • 2 cups zucchini, shredded
  • 1+1/2 cups applesauce, unsweetened
  • 2 tsp vanilla extract

Instructions
  1. Preheat your oven to 350 degrees F.
  2. Grease and flour a 9x13 baking pan. I use a little shortening to grease the pan.
  3. Combine the applesauce, sugar and vanilla.
  4. Stir in the shredded zucchini
  5. Add the rest of the ingredients and mix well.
  6. Bake for 20-30 minutes, using the toothpick test starting at 20 minutes to see if it's done.
