A slightly sophisticated take on the traditional potato salad.

Ingredients
  • 1.5 pounds fingerling red potatoes or small 'mixed' potatoes
  • 2.5 pounds fresh spinach
  • 1 bunch basil roughly chopped
  • 3/4 Cup marinated artichoke hearts drained and chopped
  • 1/3 Cup kalamata olives chopped
  • 1/3 Cup red peppers chopped
Dressing
  • 2 1/2 Tbsp red wine or apple cider vinegar
  • 1 tsp mustard
  • 1 tsp agave nectar
  • 1/2 tsp sea salt
  • black pepper to taste
  • 4 Tbsp olive oil

Instructions
  1. Boil potatoes in a large pot of water,until tender, drain and rinse.
  2. whisk together or blend vinaigrette ingredients.
  3. Cut potatoes into halves or quarters, toss in a bowl with dressing and other ingredients. Serve warm.
