Ingredients
  • 12 corn tortillas
  • 3 portabella mushroom caps
  • 1 package chicken strips use vegan alternative if desired
  • 2 bell peppers
  • 1 onion
  • 1/2 lime
  • olive oil (for sauteing vegetables)
  • 1 Tbsp taco seasoning
  • avocado, salsa, sour cream, cheese shreds (optional toppings)
Mexican Seasoning
  • 1 Tbsp chili powder
  • 1 1/2 tsp cumin
  • 1 tsp each: oregano, onion powder, garlic powder, paprika
  • 1/2 tsp salt

Instructions
  1. Slice mushrooms, peppers and onion.
  2. Assemble Mexican seasoning in small bowl.
  3. Saute peppers and onion in olive oil for around 2 min.
  4. Add mushrooms, chicken and 1 Tbsp Mexican Seasoning. Cook about 6 min.
  5. Add salt, stir and remove from heat. Add lime juice.
  6. Spoon mixture into center of heated tortilla. Add toppings if desired.
