Ingredients
  • 1 Cup whole wheat pastry flour (or spelt flour)
  • 1/2 Cup unbleached white flour
  • 1 tbsp cornstarch or arrowroot
  • 3/4 Cup vegan powdered sugar
  • 3/4 tsp baking soda
  • 1 pinch salt
  • 1 Cup orange juice
  • 2 tbsp olive oil
  • 1 tsp vinegar
  • 1 tsp vanilla extract
Servings: 8 or 9 inch cake

Instructions
  1. Preheat oven to 350, Grease and dust with flour one 8 or 9 inch cake pan.
  2. Whisk together dry ingredients in a medium bowl until combined.
  3. Add wet ingredients, mix until smooth, and pour batter into prepared cake pan.
  4. Bake 30-35 minutes, until a toothpick comes out clean. Allow to cool completely before removing from pan. Frost with frosting of your choice, or drizzle with a glaze made by whisking 3 tbsp orange juice with 1/3 cup powdered sugar.
