Ingredients
  • 1 Tbsp olive oil
  • 1/2 medium onion, chopped
  • 1 carrot diced
  • 1 stalk celery chopped
  • 2 cloves garlic minced
  • 1 zucchini sliced
  • 1 tsp basil chopped
  • 1 large can whole tomatoes
  • 1 can white beans
  • 1 small bag baby spinach
  • 1 Cup vegetable stock (check ingredients for potential allergens)
  • 2 tbsp parsley chopped
  • 1/2 tsp salt
  • pepper to taste
  • 1 box pasta macaroni, or similar (gluten-free if desired)

Instructions
  1. Heat large pot over med. heat, add oil, onion, carrot and celery. Stir until onion is transluscent.
  2. Add garlic, cook until soft, then add zucchini and basil. Cook two minutes, stirring as needed.
  3. Add tomatoes with juice.
  4. Add beans with juice, spinach, vegetable stock, parsley, salt and pepper. Bring to a boil, then reduce to medium-low and simmer 15 minutes.
  5. Meanwhile: in a separate pot, cook pasta till al dente, drain and add to soup, serve.
