Pumpkin butter will keep for about 3 weeks in the refrigerator. You can also tightly seal and wrap it and freeze the pumpkin butter for anywhere from 6-12 months. Make sure you label your container! DO NOT can pumpkin butter.

Ingredients
  • 1 29 oz can pumpkin puree not pumpkin pie filling
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 cup 100% apple juice may also use apple cider
  • 2 tsp cinnamon finely ground
  • 1 tsp ground ginger
  • 3/4 tsp whole nutmeg freshly grated
  • 1/2 tsp ground cloves
  • 2 tsp lemon juice freshly squeezed

Instructions
  1. In a microwaveable and heatproof bowl, combine all ingredients except for the lemon juice. Cover loosely.
  2. Cook for 6 minutes on high and stir. Cook for another 6 minutes and stir. Finally, cook for 3 minutes and stir. Remove from microwave, remove covering and stir in lemon juice.
  3. Cool completely. Cover so it is airtight and store in the refrigerator.
