Ingredients
  • 1/2 Cup dry quinoa
  • 1/2 Cup fresh lemon juice
  • 1/4 Cup olive oil
  • salt and pepper to taste
  • 3 bunches parsley finely chopped
  • 1/2 Cup mint leaves chopped
  • 1 pint cherry tomatoes halved
  • 1 cucumber peeled, seeded and diced

Instructions
  1. Prepare quinoa according to directions. Set aside to cool.
  2. Whisk together lemon juice, olive oil, 1/2 rounded tsp salt, and pepper to taste.
  3. Combine parsley, mint, tomatoes, cucumber and quinoa in a large bowl. Pour in oil/lemon juice mixture and toss to coat. Let sit in refrigerator for at least three hours before serving.
