This rich cocoa-flavored cake is often prepared as a layer cake with buttercream or cream cheese icing. Ingredients
  • 2 cups brown rice flour
  • 1/2 cup Tapioca starch or sweet rice flour
  • 3/4 cup sugar
  • 1 tsp baking soda
  • 1/2 cup vegetable oil
  • 1 cup cold water
  • 1/2 tsp Molasses
  • 1 tsp cinnamon
  • 2 Tbsp cocoa powder
  • 2 Tbsp Red food coloring
  • 1 tsp apple cider vinegar
  • 1 tsp salt
  • 1 tsp xantham gum

Instructions
  1. Preheat oven to 350* F.
  2. Sift brown rice flour, starch or sweet rice flour, sugar, baking soda, cinnamon, cocoa powder, salt, xantham gum (all dry ingredients).
  3. Fold in wet ingredients, except vinegar. Don't over-mix.
  4. Add vinegar last and mix.
  5. Pour mixture into an 8x8" glass baking dish.
  6. Bake 45 minutes
Recipe Notes

If you want to add frosting, wait until the cake has completely cooled.
