Everyone loves risotto, but what busy mom has time for all that stirring? This ingenious recipe is all the yum, none of the work! All you really need is a simple electric rice cooker.
Ingredients
  • 1/2 Cup minced white onion
  • 3 cloves minced garlic
  • 1 Tbsp olive oil
  • 1 small package mushrooms chopped
  • 1 tsp salt
  • 1 tsp thyme
  • 1/2 Cup White wine
  • 3 Cups prepared veg broth (always check ingredients for possible allergens)
  • 1 Cup arborio rice
  • 1/4 Cup lemon juice
  • 2 Cups fresh spinach chopped
  • 1 Tbsp Earth Balance or other vegan margarine
  • 1.5 Tbsp nutritional yeast
  • black pepper to taste

Instructions
  1. Turn on rice cooker, with lid OFF
  2. Add oil to pot, allow to heat while you prepare other ingredients.
  3. Add onion and garlic, allow to soften in oil for a few minutes.
  4. Stir in mushrooms, salt and thyme,
  5. Stir in wine and veg broth.
  6. Add rice, stir well.
  7. Add lid to pot, and restart cook cycle. If your pot is electronic, you can hit 'reset' then 'cook' again, or if your cooker is very basic, just lift the inner pot up (with pot holders) and the cooker should reset.
  8. After cook cycle, transfer mixture to another bowl and stir in: lemon juice, spinach, margarine, nutritional yeast and pepper. Serve immediately.
