Add oil to pot, allow to heat while you prepare other ingredients.
Add onion and garlic, allow to soften in oil for a few minutes.
Stir in mushrooms, salt and thyme,
Stir in wine and veg broth.
Add rice, stir well.
Add lid to pot, and restart cook cycle. If your pot is electronic, you can hit 'reset' then 'cook' again, or if your cooker is very basic, just lift the inner pot up (with pot holders) and the cooker should reset.
After cook cycle, transfer mixture to another bowl and stir in: lemon juice, spinach, margarine, nutritional yeast and pepper. Serve immediately.
