Ingredients
  • 1/2 box lasagna noodles standard, NOT no-cook
  • 1 box sliced white mushrooms (optional)
  • 1 jar your favorite marinara or pasta sauce
  • 1 bag fresh spinach
  • 1 bag shredded carrots
'ricotta' mixture
  • 1 14 oz package firm or extra-firm tofu
  • 1 cup vegan mayo (vegenaise, nayonnaise, or your own
  • 4 cloves garlic chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper

  1. Spread about one tbsp sauce in bottom of cooker. Place 1 layer of lasagna noodles on top (you will have to break them to fit), spread ricotta mixture over noodles, then layer carrots, spinach and mushrooms (if desired). Spread another layer of sauce and continue, until you reach the top, ending with sauce over noodles. Cook on low for 3.5 hours.
'ricotta' mixture
  1. Drain package of tofu and mash by hand or with a potato masher until you get a thick, spreadable consistency with no 'chunks'. Mix in salt, pepper, garlic and mayo.
Recipe Notes

Be sure that a  the noodles are completely covered in sauce.  Uncovered bits will be hard and dry.
