Ingredients
Shortcakes
  • 4 Cups sliced strawberries
  • 1/4 Cup granulated sugar
  • 2 1/3 cups Original or Gluten-Free bisquick baking mix
  • 1/2 Cup milk of your choice dairy, almond, soy, rice, etc.
  • 3 Tbsp granulated sugar
  • 3 Tbsp margarine non-dairy if needed
Whipped Topping
  • 1 Can full-fat coconut milk
  • 1/2 Cup powdered sugar
  • 1/2 tsp vanilla extract

Shortcakes
  1. Mix strawberries and 1/4 cup sugar in a bowl. Set aside.
  2. Preheat oven to 425.
  3. In another bowl, stir Bisquick, milk, 3 Tbsp sugar and margarine until combined. Drop dough by spoon onto un-greased baking sheet to make 6 shortcakes.
  4. Bake 10 to 12 minutes. Split in half and arrange with strawberries and whipped topping.
Whipped Topping
  1. Chill can of coconut milk and bowl of stand mixer overnight in fridge.
  2. Scoop solidified fat from top of can, save liquid for another use, or discard.
  3. Beat for 30 seconds, then add vanilla and sugar and beat for about 1 minute. Serve immediately, or refrigerate. Will keep for several days.
