Ingredients
  • 12 oz coconut milk
  • 12 oz Coconut Cream
  • 2 Cups vegetable broth
  • 1/4 Cup thai red curry paste
  • 1-2 Tbsp powdered ginger
  • 4 cloves minced garlic
  • 1/4 diced yellow onion
  • 2-3 stalks diced lemongrass
  • 1 red bell pepper cut into strips
  • 6 carrots diced
  • 1 bag snowpeas
  • 1 lb firm tofu press in a dishtowel to get rid of extra water, cut into large cubes
  • 1 bunch thai basil roughly torn

Instructions
  1. Combine coconut milk, cream and broth in a pot over medium heat.
  2. Add curry paste, ginger, garlic and onion. Bring to a boil.
  3. Reduce to a simmer, add remaining ingredients except basil, which will be used as a topping.
  4. Serve over rice, or by itself. Add Sriracha for extra spice.
