Ingredients
Salad
  • 3 Cups vegan mini-marshmallows
  • 1 Can drained mandarin oranges
  • 1 can chopped pineapple
  • 1 cup shredded unsweetened coconut
  • 1/2 cup chopped organic maraschino cherries
Cream
  • 1 Can full-fat coconut milk refrigerated overnight
  • 3/4 cup vegan confectioner's sugar
  • 4 ounces tofutti or other brand vegan sour cream

Cream
  1. Chill the bowl of your stand mixer in the fridge at least 10 minutes.
  2. Open coconut milk can, and scoop solidified coconut fat into the mixer bowl.
  3. Beat until creamy, add powdered sugar, beat until fluffy, then fold in sour cream. Chill in fridge while assembling other ingredients.
Salad
  1. Combine ingredients with cream in a glass or ceramic bowl, chill at least 2 hours before serving.
