Using parchment or wax paper, line a baking pan and set to the side.
Peel and slice the zucchini if you haven't already. Over medium heat, cook the sliced zucchini, covered in water in a small pan.
Once they start to boil, reduce the heat. Let them steam on low heat for about ten minutes. Remove from heat and let them cool.
Drain zucchini and place in a blender or food processor. Add everything except for the agar agar and blend until you have a smooth mixture.
Add agar agar and blend again.
Pour mixture into your lined pan and refrigerate.
When the "cheese" is chilled, you can slice it and eat.
Or you can "age" it by letting it sit in the refrigerator uncovered for at least a week. It will be firmer and keep better than the fresh cheese.
