Ingredients
  • 6 cups gluten-free chicken broth
  • 1/2 tsp dried oregano leaves
  • 1/2 tsp dried basil leaves
  • 1 bay leaf
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 2 stalks of celery chopped
  • 1 cup carrots chopped
  • 1 cup frozen mixed vegetables
  • 1 cup gluten free brown rice spiral pasta
  • 1 14.5 oz can petite cut tomatoes
  • 2 cups cooked chicken chopped
  • salt and pepper to taste

Instructions
  1. Combine broth, oregano, basil, bay leaf, onion, garlic, celery, carrots and mixed vegetables in a large pot.
  2. Bring mixture to a boil and add pasta.
  3. Return to boil and cook for 12-15 minutes or until pasta is tender.
  4. Add the chicken and tomatoes, last, and cook until heated through. Add salt and pepper to taste.
