Ingredients
  • 4 Cups uncooked macaroni noodles (gluten free if needed)
  • 1 Cup vegan mayo
  • 1/4 Cup white vinegar
  • 2/3 Cup granulated sugar
  • 2 1/2 Tbsp prepared yellow mustard
  • 1 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 medium white onion finely chopped
  • 4 stalks celery chopped
  • 1 green or red bell pepper chopped
  • 1/2 Cup carrot shredded

Instructions
  1. Boil and drain pasta according to directions. Rinse under cold water and set aside.
  2. In a large bowl, combine mayo, mustard, vinegar, sugar, salt and pepper. Stir in vegetables and macaroni. Cover and refrigerate at least four hours before serving.
