Ingredients
  • 1 pound pasta of your choice I like rotini
  • 2 pounds vegan crumbles of your choice
  • 2 Tbsp olive oil
  • 1 sweet onion
  • 2 jalapeno peppers, seeded and chopped optional
  • 4 cloves chopped garlic
  • 3 Tbsp chili powder
  • 2 Tbsp Braggs liquid aminos
  • 1 cup broth
  • 1 28 oz can diced tomatoes
  • 1 14 oz can crushed tomatoes
  • chopped scallions for garnish
  • shredded vegan cheese for garnish
  • coarse salt to taste

Instructions
  1. Boil pasta al dente, drain and set aside.
  2. In a large, deep pot, saute onion, peppers and garlic in oil. Add crumbles and season with chili powder, cumin, cayenne and salt.
  3. Cook together 5 minutes. Stir in broth. Keep cooking until liquid has reduced by 1/2.
  4. Stir in tomatoes and simmer for 10 min.
  5. Add hot pasta to chili pot, mix. Remove from heat, serve topped with scallions and shredded cheese.
