Ingredients
  • 1 cup chocolate chips To make this recipe dairy free as well, use a dairy free brand such as Enjoy Life
  • 1 cup Sunbutter Or any kind of nut or seed butter
  • 1/3 cup Oat flour Or coconut flour for gluten-free
  • 2/3 cup Confectioners sugar
  • 2 TBSP butter Again, to make dairy free, use a dairy free brand such as Smart Balance

Instructions
  1. Combine all of the ingredients minus the chocolate. Mix them in a food processor.
  2. Refrigerate mixture until firm (about 15-20 minutes).
  3. Scoop the mixture out using two greased spoons. Press the mixture into an egg shape. Place them on a wax lined baking sheet. Freeze for approximately 15 minutes.
  4. Melt the chocolate while the eggs are freezing. Set the microwave to half power (50%). Microwave in 30 second intervals, stirring in between each. Stop microwaving when all chocolate except for a few chunks are melted.
  5. Dip and coat the eggs in the chocolate using a fork. Place on wax paper to cool. Once you have coated all the eggs, put them in the refrigerator to harden. Let cool for at least fifteen minutes.
