Ingredients
  • 3 Cups old fashioned / rolled oats *certified gluten-free if needed
  • 1/2 chopped nuts OR sunflower seeds, if allergic to tree nuts
  • 1/2 tsp nutmeg
  • 3/4 tsp cinnamon
  • 1/4 Cup coconut oil (room temp)
  • 1/3 Cup maple syrup or agave nectar
  • 1 Cup fruit of your choice a combination of raisins, shredded coconut, dried apple, cranberries, chopped dried apricots, etc.

Instructions
  1. Pre-heat oven to 300 degrees F.
  2. In a bowl: Combine oats, nuts or sunflower seeds, and spices. Stir to combine.
  3. In a smaller bowl, combine oil and maple syrup or agave nectar. Pour over oat mixture and stir to coat dry ingredients.
  4. Spread mixture on a baking sheet and bake for 30 min or until oats are lightly toasted, stirring once halfway through.
  5. Remove from oven and cool, stir in fruit, and then store in an airtight container.
