Ingredients
  • 2 pounds Yukon Gold potatoes mashed
  • 1 Tbsp olive oil
  • 1 yellow onion chopped
  • 1 leek
  • 2 cloves garlic minced
  • 3 Cups kale shredded
  • 3 Cups Cabbage shredded
  • salt and pepper to taste
  • 1/2 Cup vegan margarine
  • 1/4 Cup unssweetened non-dairy milk

Instructions
  1. Cover potatoes with water in a large pot, bring to a boil, reduce heat, cover and simmer 15 to 20 minutes.
  2. While potatoes cook, heat olive oil in a saucepan over medium heat, saute onion, leek and garlic until tender, add kale and cabbage, season with salt and pepper to taste, and cook until tender, stirring frequently, for 10 minutes.
  3. When potatoes are done, drain, return to pot, add margarine and non-dairy milk and mash with a potato masher. Stir in vegetable mixture and serve.
