Ingredients
  • 4 hotdogs
  • 3/4 cup cornmeal
  • 1/3 cup rice flour
  • 1/3 cup cornstarch
  • 1/3 cup tapioca starch
  • 1 tsp xanthan gum
  • 1 Tbsp baking powder
  • 1/3 cup sugar
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 heaping Tbsp egg replacer mixed with 2 Tbsp water Bob's Redmill Gluten-free Vegan Egg Replacer is good. Or use 1 egg if no egg allergy.
  • 1 cup milk alternative
  • 2 Tbsp coconut oil melted

Instructions
  1. Slice hot dogs into 6 pieces each - If your child is helping with this part, have them cut the hot dogs into thirds first, then cut the thirds in half. Set aside.
  2. In medium bowl, stir together remaining ingredients.
  3. Grease a mini loaf pan or 24 cup mini muffin pan. Spoon some batter into the bottom of each pan. Enough to create a bottom layer.
  4. Have your child insert one hot dog piece into each loaf/muffin cup, and cover over with remaining batter.
  5. Bake at 400 °F for 20 minutes.
