Ingredients
  • 2-1/4 cups full-fat coconut milk, divided
  • 2-1/2 tsp unflavored gelatin powder
  • 1/2 cup pure maple syrup
  • 1/4 cup natural cocoa powder
  • 1 tsp vanilla extract
  • dash sea salt

Instructions
  1. In a medium, heat-proof bowl, place 1/4 cup of the coconut milk Sprinkle the gelatin on top of the coconut milk and allow to stand for 5 minutes.
  2. In a saucepan, heat remaining 2 cups of coconut milk, maple syrup, cocoa powder, vanilla extract, and sea salt for 5 minutes on medium-high heat.
  3. Whisk the softened gelatin mixture into the saucepan and continue whisking until all of the gelatin is dissolved.
  4. Pour the mixture into popsicle molds and cool in the refrigerator for 1 hour. Once cool, place in freezer for 6 hours to freeze completely.
