Ingredients
  • 2 teaspoons olive oil
  • 3 pounds boneless skinless chicken thighs
  • 2 onions sliced
  • 15 ounces fire roasted tomatoes
  • 1/4 cup water
  • 2 Tablespoons cumin
  • 1 teaspoon chili powder
  • 3 teaspoons garlic powder
  • 3 teaspoons paprika
  • 1/2 teaspoon pepper
  • 1 1/4 teaspoons salt
  • 3/4 Tablespoon sugar
  • fresh cilantro
  • cherry tomatoes halved

Instructions
  1. Drizzle the olive oil in the bottom of the slow cooker.
  2. Place the boneless, skinless chicken thighs and sliced onions in the slow cooker.
  3. Add the fire roasted tomatoes, water, and all the spices. Give it a quick stir, and place the cover on the slow cooker. Cook on high for 4-6 hours, or low for 7-8 hours.
  4. Use a slotted spoon to remove the chicken from the slow cooker and shred it. Garnish with the cherry tomatoes, fresh cilantro, jalapenos, or whatever your heart desires.
  5. Serve in taco shells or over tortilla chips with your choice of toppings.
