Ingredients
  • 1 lb extra firm tofu frozen and thawed
  • vegan mayonnaise
  • 2 Tbsp pickle relish
  • 1 stalk celery minced
  • 1 Tbsp minced onion
  • 1/2 tsp Dijon mustard
  • salt to taste
  • pepper to taste

Instructions
  1. Break tofu into large pieces, press water out into a clean dishtowel. Crumble by hand into a bowl.
  2. Add remaining ingredients and mix together with vegan mayo 1/2 cup at a time until desired consistency is reached, up to two cups.
  3. You can serve immediately, but it will be better after sitting in the fridge overnight.
