Ingredients
  • 1 ripe avocado
  • 1/2 lemon juice and zest
  • 2 cloves garlic
  • salt to taste
  • 1/4 Cup fresh flat-leaf parsley
  • 2 T olive oil
  • black pepper to taste

Instructions
  1. Blend lemon juice, garlic and olive oil in a food processor.
  2. add remaining ingredients minus pepper and zest, blend until creamy.
  3. Toss with pasta of your choice, garnish with pepper and lemon zest.
