Ingredients
  • 10 egg-sized red potatoes
  • 1/2 Cup vegan mayo
  • 2 Tbsp mustard
  • 1/2 tsp Kala Namak optional--adds an eggy taste
  • salt and pepper to taste
  • 1/4 Cup olive oil
  • paprika for garnish

Instructions
  1. Wash potatoes and peel if desired. Rub each in olive oil and bake at 400 for around 30 min or until tender.
  2. Allow to cool. Carefully cut each potato in half, and scoop out the inside into a bowl, leaving a shell about 1/4 thick.
  3. Mix potato, mayo, mustard and spices, scoop back into shells and dust lightly with paprika.
