A great diary-free treat for fall!
Ingredients
  • 2 cups full-fat coconut milk chilled
  • 1 1/2 cup pumpkin puree
  • 1 cup coconut sugar
  • 1/2 ts ground ginger
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • pinch salt

Instructions
  1. In a medium bowl, combine coconut milk and pumpkin puree.
  2. Add the rest of the ingredients and stir until everything is combined.
  3. Pour into an ice cream maker and make ice cream following the instructions on the ice cream maker.
