Ingredients
  • 1 package firm tofu drained, with excess moisture squeezed out in a dishcloth.
  • 2 Tbsp nutritional yeast
  • 1 tsp garlic
  • 1 tsp turmeric
  • salt and pepper to taste
  • 1 package frozen tater tots
  • 1 package vegan breakfast sausage (check for any allergens)
  • Salsa and vegan sour cream as desired
  • 1 packgage tortillas

Instructions
  1. 1. Preheat oven according to directions and start to bake tater tots.
  2. Heat an oiled frying pan, then crumble in the tofu. Add: nutritional yeast, garlic, turmeric, salt and pepper. Saute until tofu begins to brown.
  3. In a separate pan, prepare breakfast sausages according to directions. Expect them to cook more quickly than your tofu. Cut sausages into strips or chunks to add to burrito.
  4. When all three are ready, assemble burrito in tortillas. You can heat them quickly in a microwave, or wrap them in foil and toss in the oven for a minute or two.
  5. Serve garnished with salsa and sour cream, or even add olives, avocado or vegan shredded cheese if you like.
