Delicious gluten- and lactose-free rice pudding, also free of the other top 8 allergens. Great for breakfast, dessert or a quick, hearty snack.
Ingredients
  • 2 Cups Cooked Brown Rice (Save half a cup)
  • 3/4 - 1 Cup Non-dairy milk Based on your Non-Dairy Milk choice you may need to adjust sweetness
  • 1/2 -3/4 Cup Sliced Bananas Or 1-2 tbsp of chopped dried fruit, coconut sugar or maple syrup.
  • 1/4 - 1/2 tsp cinnamon
  • A few pinches nutmeg
  • 1/8 tsp sea salt

Instructions
  1. In a small saucepan, add 1 1/2 cups of the cooked rice.
  2. Add the remaining ingredients starting with 3/4 cup of milk.
  3. Puree the mixture using a hand blender. (You may also puree ingredients before adding to saucepan)
  4. Add the 1/2 cup of rice, and turn heat to medium-low.
  5. Let it thicken and warm for several minutes. (You can add the rest of the milk if you would to thin it)
  6. Adjust with sweetener and orange/lemon zest if desired and Enjoy!
